Does anyone know if it's possible to disable the newsletter option at the bottom of the user profile and new user sign-up pages?
 
I need to use an external newsletter service and don't want customers signing up on the wrong system.

Chris, you can disable it in Order Profile settings, but the option on the new user signup page you can not disable. You need to edit the template file to remove that option.
 
I've asked Viart a long time ago to add the same newsletter option from Order Profile settings to Site Users - Profile Settings but till 3.4.7 that option has not appeared.

I commented out the appropriate line in /templates/block_user_profile.html (line 306 in my editor).
 
That seems to do the trick.
