I may just be dense here. I'm building an mp3 site, but will also be selling physical CD's. How can I list the three types of media within the same product description. The three types are individual song downloads (10-16 items), full CD download, and physical CD?

From 2.6 version Viart Shop has ability of creating bundle products where you can grouping other products into one bundle product. For this you should use 'Options & Components' link.
