I want list all my products in multi language. I originally started duplicating each product, translating the text & restricting the language it could be viewed in but have hit the problem of stock control. Any suggestions on best way of doing this?

Simply enter the text like this in the area you want translation to take effect:
[EN]Text in English[/EN] [FR]Texte Francaise[/FR]
 
You would be best to read the manual where you will find instructions and save all your wasted time

Could this be used on my meta title, descriptions also?

Ive just checked and it does work on the meta data in Global Settings

Do you think google will have an issue with using this in the meta fields?

The default language is set in "/includes/var_definition.php" and this language meta data, I suspect, would be served on request to a web crawler.
