Is there a way to change the default disply of order stat to a different time period? For example, I would like to see the stat in the last 30 days or 60 days instead of just "last 7 days" or "this month".

Edit the admin_orders.php and modify the date length and change the tite of it in the admin section for static messages...
 
I will say that these stats are really helpful to me the way that they are, and if you're looking to find a different stat, you can search by that stat by using the filtering tool on the top left
