I accidentally turned on encryption on both my passwords and my admin password. Any way to at lease get the admin back to normal?

If you've encrypted all your passwords with MD5 there is no way to back them to non-encrypted again.
Only if you have users and admins tables backups you can restore them.

For PCI compliance, I still need to encrypt the passwords.
 
So the only real problem is that when I need to help a customer with a password, I am completely tied. All I can do is tell them to make a new password.

Are you saying I could go back to non-encrypt for admin and users if I have an old backup?
 
Another idea, is that I could tell my customers that THEY need to know their passwords!!! My customers are basically lazy and don't care about anything other than trying to get me to do their own work!

Customers are supposed to know their own passwords, they create them. If they forget them they can use the password reset procedure. That is security!!
Vito meant that if you had a database backup taken BEFORE the passwords were encrypted you would then have access to the passwords for there.
You must be too kind to your customers!! Let them do their own work and then they might appreciate you more when you occasionally have to help them.
