I know how to change the top nav, but the bottom menu I can't seem to figure out. I would like to change what appears for navigation on the bottom above my footer copyright text.

There are two things you can do:
 
Administration > Web Pages > Edit Page ... Show Link in Footer
or create html for the footer:
Administration > Global Settings ... Footer body
