I would like to add Special Offers as a menu item instead of having it displayed on the home page.
Can you please explain to me how to do this?

We got around this, by creating a category called Specials, and placing all the items on Special Offer into this category as well as it's currenty category.
 
Then you can create a link in your menu just to this category.
