Um, I can understand adding these two new options for displaying the categories, but why remove the others?
 
I need the other ones. I can't have a long list of categories like that. I sell books. There are tons of categories. They need to be in rows and columns.
 
Is there any way to get the old menu options back?

In v2.7 You have two List blocks.
In Products Subcategories block You have columns (old way)
 
Products (Subcategories List)
Products (Categories List)

I think its imposible without code in block_categories_list.php
Write Php Code which'll build html and js code as output + CSS classes for <LI> tagsa and similar.
