OK, Stupid question here. I think things are working ok on my cart, I have recieved a few orders and paypal has sent the notification.
When I review the order in the admin panel, I see no way to see how a customer paid.
I am only using Personal "Mail a check" and paypal and just want to see which way the customer paid.

once you go to the admin orders screen, you should be able to click on the order to go into it and then in the screen towards the middle you will see payment information. If it's via paypal, you should have received email notification as well as see it on your account screen

You may know that you can have an e-mail sent to you when a sale/payment has completed successful? Go to
Administration > Payment Systems > PayPal > Final Checkout Settings
 
Complete the 'Email Notification' section and check 'On Success' - at least you know payment has been made and you can check, if you wish, as suggested by Dan.
